Crock pot Balsamic Chicken {Recipe}

Sharing one of my favorite clean crock pot recipes.This balsamic chicken is delicious and healthy! I’ve found balsamic vinegar is a really good alternative to sauces, such as teriyaki or BBQ that have a lot of added sugar. I made this one as a freezer meal. I divided the amount in the below recipe between 2 freezer bags {I doubled the recipe to get 4 meals out of it}, and wrote the directions on the bag.


  • 4-6 boneless skinless chicken breasts
  • 1 medium onion thinly sliced
  • 3 tsp minced garlic
  • 1/2 cup balsalmic vinegar
  • 1 TBSP olive oil
  • 1 tsp each: dried oregano, basil, and rosemary
  • 1/2 tsp dried thyme
  • 3/4 cup low sodium chicken broth
  • Salt & Pepper to taste


Add all ingredients to crock pot. Cook on low for 8 hours, on high for 4 hrs. Shred chicken with 2 forks about 15-20 minutes before serving. 


I like to have this with rice or quinoa and sauteed veggies on the side {as shown in image above}. Oh and a glass of good red wine 🙂

Freezer Meals

Last summer Colin and I took an evening to make an entire month’s worth of freezer meals. It required some major onion chopping and coordination but it was totally worth it. Most of them were crock pot meals that we could just throw in in the morning. Dinner done and on the table minutes after walking in the door? Glorious.  But as I said, that was last summer and we have since ran out of those meals so we’ve been back to scavenging up dinner every evening {ok, well, that’s a semi-lie now that we have housemates they’ve been making us delicious meals that are ready when we walk in the door…hard to beat that}. We’re horrible at meal planning despite ours and family member’s efforts at helping us, we’re just bad at it.

So this time I held a little freezer meal party with our housemate Annette and my friend Lydia from work. We each chose 2 recipes and each bought/brought the ingredients for our recipes. We tried to pick meals with limited prep time, though there are a few that we cooked before freezing. And for some reason we chose a lot of Mexican dishes…. but it helped that a lot of the dishes called for similar ingredients.
