Oatmeal Scotchies Recipe

The last two half marathons I’ve completed were fueled by Oatmeal Scotchies. They are the perfect cookie to have before a race, after a race, before a training run, for breakfast, well, really they are perfect anytime. 🙂 If you have never heard of these, then you are missing out big time and need to bake up this recipe now. These cookies have the perfect combination of sweet and spicy {spicy as in cinnamon & nutmeg}. I know, I said I would post healthy recipes…. those are coming soon.

I only had one of these cookies left to take a photo of…..they go fast

Ingredients:

1 1/4 cups unsalted butter at room temperature
3/4 cup brown sugar
1/2 cup white sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp salt
1 tsp ground cinnamon
1/4 teaspoon ground nutmeg
3 cups quick-cooking rolled oats
1 cup butterscotch chips
1/2 cup sweetened flaked coconut

Directions

  1. Preheat oven to 375 degrees F.
  2. In a mixing bowl, beat the butter, brown sugar, white sugar, egg, and vanilla extract until well combined. Beat in flour, baking soda, salt, cinnamon, nutmeg, and rolled oats until thoroughly mixed. Stir in the butterscotch chips and coconut.
  3. Drop the dough by tablespoonfuls about 2 inches apart onto baking sheets.
  4. Bake the cookies in the preheated oven just until the bottoms are light brown, 7 to 8 minutes. If you prefer crunchier cookies, bake 9 to 10 minutes.

I haven’t actually baked these myself, my friends have always been the ones to bake them for me…I think I like it that way 😉
