Easy Greek Quinoa Salad {Recipe}

Ok, I think we’re all ready for a post that’s something other than house projects!! Sheesh, at least I am 🙂

I have been on a quinoa kick lately. Up until a couple months ago I had never even had quinoa and now I’ve made it almost every week since {I know, totally late to the quinoa party}. Today I’m sharing a super easy greek quinoa salad recipe. I could eat this salad all day every day. I’ve been making a big batch of it at the beginning of the week so we can enjoy it for lunch throughout the week! It’s super easy and super good.

Ingredients:

1 cup quinoa
Cherry tomatoes halved
1/2 red onion
1 cucumber
1/2 cup kalamata olives
1 TBS olive oil
Juice from 1 lemon
Feta cheese
Salt & pepper to taste

Directions:

  1. Prepare quinoa. Generally it’s 2:1 ratio of water to quinoa (so 2 cups water, 1 cup quinoa) I cook it like I cook rice, bring the quinoa and water to boil and then cover and let simmer for 15-20 minutes. I actually have no idea if that’s really how you’re supposed to cook it but it always turns out just fine. Set quinoa aside and let cool.
  2. Chop all vegetables and olives. 
  3. Combine all chopped veggies, olives and quinoa in a large bowl.
  4. Add olive oil, lemon juice, feta cheese, salt and pepper to taste and stir it all together.

And that’s it! Easy, right?? And so delicious. And healthy 🙂
