Clean No-Bake Cookies {Recipe}

Do you all remember no-bake cookies?? Chocolatey, oatmeal goodness without even turning on the oven? Lately I have been making a cleaner and healthier version of these old favorites. Though it’s still probably not so healthy to eat a whole batch of these…oops.

They literally taste just as good, if not better than the real deal. And they are guilt free {well unless you eat the whole batch like I almost did}. I think they are perfect with a nice glass of red wine. I recommend storing these in the freezer otherwise they get a little too soft.

  • 1 cup natural creamy peanut butter {I like Adam’s}
  • 1/2 cup honey
  • 1/2 cup coconut oil
  • 2 tsp vanilla
  • 2 1/4 cup oatmeal {I prefer the quick cooking oats}
  • 6 Tbsp cocoa powder

  1. Melt the peanut butter, honey & coconut oil in saucepan over medium heat. Stir constantly.
  2. Once completely melted remove from heat and add remaining ingredients. Stir until combined.
  3. Drop by the spoonful on a lined baking sheet.
  4. Place baking sheet in freezer until cookies harden {usually takes around 15-20 minutes)
  5. Enjoy!

Give them a try and let me know what you think! What are your favorite healthy treats?
